Family Favorite Blueberry Muffins
Ingredients:
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, melted
2 large eggs
1 cup buttermilk
1 1/2 tsp vanilla extract
1 1/2 cups fresh or frozen blueberries (if using frozen, don’t thaw)
1 tbsp flour (for tossing with blueberries)
Coarse sugar for topping (optional, but highly recommended!)
Instructions:
Preheat your oven to 375°F and line a muffin tin with paper liners or lightly grease.
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
In a separate bowl, whisk together melted butter, eggs, milk, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix!
Toss the blueberries with 1 tbsp of flour (this helps prevent them from sinking) and gently fold them into the batter.
Divide the batter evenly among the muffin cups, filling about ¾ full. Sprinkle coarse sugar on top if desired.
Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
Let cool for a few minutes before enjoying!
These muffins are best enjoyed fresh but can be stored in an airtight container at room temperature for a couple of days—or frozen for easy breakfasts down the road.
